This shocking practice came to light in a hotpot restaurant in Sichuan. The restaurant staff would collect the oil left by other customers, mix it with new oil and cook food with it. It is called ‘saliva oil’ or someone else’s fake oil. On December 2, the Nanchong Market Regulation Administration took action and found in the raid that chili oil, which had been left by other customers, was indeed being used in the next customer’s food. The restaurant owner also admitted that he used to do this to enhance the flavour.
