An insightful evening dedicated to Italian flavours

The Italian Embassy Cultural Centre recently organized a panel discussion on Italian Cuisine: Tradition and Evolution. The purpose of this discussion was to identify how the cuisine has travelled around the world. It also aimed to identify how it fits into the concept of ‘Glocal’ when it comes to Indian food culture.

The panelists for the session included Rita Monastero, chef, culinary instructor, and food writer, Ritu Dalmia, celebrity chef, and author, Ambarish Satwik, leading doctor and food enthusiast. The session was moderated by Ambreen Khan, a media expert and food curator.

During the discussion, chef Ritu and Rita shed light on the concepts of Italian cuisine. They also made the audience understand the reasons behind the shift in flavours according to the region they are served in. Similarly, Ambarish, another food enthusiast, shared his experiences eating at Italian restaurants and the nuances of the cuisine.

Ritu said, “I think change is the only constant in any cuisine. As chefs, we need to assure that while the shift is happening the soul of cuisine is intact because that is its beauty and it should not get lost in the name of trends and experiments.”

Agreeing with Ritu, Rita also stressed safeguarding the traditional flavours for future generations, as that defines the identity of cuisine.

On the concluding note, Ambreen, who is a keen food lover mentioned a few instances of Italian flavours that have mesmerized her and said, “I think it is one of the most delicious cuisines that has something for everyone and it’s time to let the magic of Italian cuisine spread beyond pasta and pizza.”
